Here at Bauman College we are fully committed to using the best organic, seasonal, and local ingredients available. 

There are so many good things about eating locally including the fact that it benefits the local economy, causes less environmental impact, and holds producers accountable for ethical practices. As a tasty bonus, local and seasonal produce is fresher making it more delicious and nutritionally dense! We feel so strongly about sourcing local ingredients that we’ve recently boosted our Berkeley  Natural Chef Program with what we’re calling the  “CSA Improv.”

Each week we’re receiving a CSA box from Farm Fresh To You, a local organic produce delivery service in the Bay Area. This initiative is providing our chef students with an opportunity to perform a “CSA Improv” where they are asked to create a seasonal, therapeutic dish using only the ingredients from our CSA box, and some choice items from our fantastic holistic pantry of whole grains, legumes, nuts, and seeds. Check our our this month's recipe for a great way to use produce that is in season right now near you.

We have chosen Farm Fresh To You’s “Valley Box” because it is the most local of all of the options. All of the produce in this box comes from Capay Valley, an area North East of the Bay, less than 75 miles away.

We’re so excited to be able to offer this training to our students and carry on the localvore ideology built into the very foundation of Bauman College’s curriculum. We hope that you, too, will find the inspiration to join this growing movement and experience the benefits it has on your health, local economy, and the environment.

Food, the most basic of human needs, must be reevaluated and understood in a way that creates and builds health — both for the individual and for the environment. It also must be considered in a way that ensures future generations will have access to a bountiful and healthful food supply. It's quite simple, but we've gone far astray. Sustainable Nutrition is the notion that we can get back to this ideal and truly understand and appreciate the value of healthful, clean food.
