Kale Chutney

Serves: 6 servings or 1½ cups
 
Ingredients
  • 2 fistfuls kale (about 2 cups)
  • 4 tsp coconut (unsweetened and dried works, but fresh is great!)
  • 1 bunch cilantro leaves
  • 1 large red onion
  • 2 tomatoes
  • pink Himalayan salt, to taste
  • lemon juice, to taste
Instructions
  1. Blend all ingredients in a blender.
  2. Squeeze some fresh lemon juice onto the top of the chutney.
  3. Enjoy with fresh idlis!
