Amaranth and Apples

Amaranth and Apples

This recipe makes for a great winter time breakfast.  It's hearty and comforting, but won't weigh you down!

3 cups almond milk
1 cup amaranth, soaked overnight and drained
granny smith apple, finely diced
2 tbs pecans, soaked overnight, chopped
1 tsp cinnamon (little extra for garnish)
tsp cloves
2 tsp honey

1.   In a medium saucepan, add the almond milk and amaranth and bring to a boil.
2.   Reduce to a simmer, and cook for 30 to 40 minutes, stirring constantly.
3.   Add the apples, pecans, cinnamon and cloves and simmer over low heat for an additional 2 to 3 minutes.  The texture should be thick and creamy.  Add more almond milk or cook longer until desired consistency is reached.
4.   Remove from heat and ladle into serving bowls.  Garnish each with a teaspoon of honey and a dusting of cinnamon.
*For a softer consistency in the apples, add in Step 1 with almond milk and amaranth.
