Arugula Salad Recipe

Here's one of my favorite delicious salads:
Serves 2

2 Meyer lemons
1 T. honey
1/6 c. extra virgin olive oil
1/8 t. sea salt
Freshly ground black pepper

Peel the lemons and cut into quarters (remove any seeds).  Put into a blender, along with the honey, and blend at high speed for about a minute.  Turn to medium speed and slowly pour in the olive oil.  Season with the sea salt and pepper.  Makes half a cup.

For the salad:
1/2 lb. Arugula leaves
1/2 a pear, cut into shavings with a peeler
1/4 c. pumpkin seeds (candied if possible)
1/4 c. dried cherries or cranberries

In a mixing bowl, toss the arugula and pear shavings with enough dressing to generously coat.  Sprinkle with the pumpkin seeds and dried (cherries or cranberries).  Enjoy!

It's Helen from your N.E. class.  We met the first night when we both arrived at the same time for class.

The recipe sounds great!!  Is this something that you created yourself? 

Just now I'm going to post one of my favorites from Dr. Weil's "Eating Well for Optimum Health".  I think you will enjoy it as well...
