Green Garlic Dressing

Here is one of my favorite dressing recipes from Dr. Weil's "Eating Well for Optimum Health" book as follows:
1/2 C (4 oz.) silken tofu
2 TBSP extra-virgin olive oil (EVOO)
1 TBSP fresh lemon juice
1 clove garlic (Generally I put 2 or 3 or more)
1/4 C (packed) fresh coriander (cilantro) leaves or parsley leaves
salt and black and red pepper to taste
Place all the ingredients in a food processor or blender and process until smooth.
Use on salads, vegetables, or fish.
Servings: 4.
Calories: 86
Fat: 8 g (83% of calories from fat)
Saturated fat: 1g
Protein: 3g
Carbs: 1 g
Cholesterol: 0 mg
Fiber: less than 1 g
Nutritional benefits: Protein, calcium, isoflavones from tofu; monounsaturated fat; micronutrients.
