Hello.
I have found the cookbooks written by Bette Hagman to be extremely informative, easy to follow, and delicious recipes. I have talked to others that are gluten intolerant, like me, and they have enjoyed her books as well.

A book that I bought at Whole Foods and have recommended to clients is
Gluten-Free 101: Easy, Basic Dishes Without Wheat
by Carol Fenster. I can't vouch for the recipes because I haven't yet tried any of them (although they sound yummy), but the book has already been useful to me because it has an extensive introductory section explaining all the different ways you'll find gluten listed on labels, good information on a large list of alternative flours, advice on adjusting to a gluten-free lifestyle, etc.
