Spicy Kale, Sweet Potato and Black Bean Soup

This is one of my favorite healthy recipes from my blog archive. Check out more through my website and blog at www.briopilatessf.com

Ingredients:

1 yellow onion (peeled and chopped)
1 bunch kale (washed, stemmed and chopped)
    keep the stems (chop them into small pieces)
1 large sweet potato or yam (peeled and chopped)
4 carrots (peeled and chopped)
1 red bell pepper (washed, cored and chopped)
1 can black beans (drained and rinsed)
about 48 ounces of low sodium vegetable stock (1 and a half containers)
2-3 teaspoons of Organic Harvest chipotle habanero pepper sauce

Directions:

In a large soup pot on medium high heat, saute onion and kale stems until onion is translucent and kale stems are soft
Add sweet potatoes, carrots, red pepper and black beans
Saute until all vegetables are soft (about 10 minutes)
Add stock and hot sauce and simmer for 30 minutes
