An improv recipe a fellow student and I created on Monday...a great way to use celery root!

Asian Remoulade with Celeriac and Carrot

An Asian inspired remoulade slaw. The light and fresh flavor of the celery root and other vegetables, is highlighted by the bright, tangy dressing in combination with the cilantro. Furikake is a table condiment made of roasted tan and black sesame seeds, green nori flakes, and pickled red shiso leaves. Celery root is a natural diuretic, aiding those who are experiencing fluid retention.

2 Tbs Tamari
1 Tbs Mirin
2 tsp raw honey
1 1/2 tsp finely minced ginger
1/4 tsp ground ginger
1/4 tsp red pepper flakes
1/4 tsp black pepper
1/2 cup sesame oil
1 tsp toasted sesame oil

2 carrots, fine julienne
1 med celery root, grated
1 zucchini, grated
1/2 cup cilantro, chopped
2 tsp sesame seeds
1 tsp Eden Shake (Furikake)

1. Whisk together all ingredients for dressing, slowly adding oil to emulsify.

2. Combine salad ingredients.

3. Toss dressing with salad to coat. Garnish with cilantro and additional Furikake.
