Yummy Yellow Dahl

Yellow Dahl Soup:  I love making Dahl. They are great to start the day, for lunch, a snack or dinner.  Always a good time for dahl doll!  They are protein packed, enzymatic, warming and nourishing.  Many of the herbs used aid the digestive and immune systems. This is a recipe I made up this week and ate.  It served about 6-8 people.

2 cups of dry yellow lentils
6 cups of water
¼ tsp of cumin seeds
¼ tsp fennel seeds
½ tsp coriander seeds
1tsp turmeric powder
1TBSP chopped fresh ginger
salt and pepper
2 Leeks
3 Carrots
½ Cauliflower
Fresh cilantro
1 Tbsp ghee

Instructions: Soak lentils for about an hour.  Rinse.  In a pot melt the ghee and add the ginger, fennel, cumin and coriander seeds.  Let sauté for about 3-5 minutes on a low heat.  Add the lentils and stir.  Add water and one leek and carrot finely chopped. Bring to a boil and then simmer for 1 hour covered.  Add the remaining carrots (1 inch pieces) and cauliflower (medium chunks) and cook for 15 more minutes.  Turn off burner.  Let Dahl sit for 10- 15 minutes.  Serve and garnish with fresh cilantro and fresh lemon juice.  Salt and pepper to taste.  Bon Appetite!
