Summer Salad - Black Bean and Millet Lettuce Cups

Here is a wonderful salad for these hot summer days.  I found this on-line and served it to a group of friends at a pot luck supper.  I added the butter leaf lettuce cups for plating.  Lettuce cups are a pretty base for summer salads.  In addition, I added a few nasturtium flowers for a festive touch.

Black Bean and Millet Lettuce Cups
6 servings
35 min 5 min prep

1 cup millet, rinsed uncooked
3 cups filtered water
2 cups canned black beans
2 large tomatoes, chopped
1 small red bell pepper, diced
1 medium cucumber, seeds removed and diced
1 medium onion, diced chopped parsley (optional)
chopped cilantro, to taste (optional)
edible flowers - nasturtiums (optional)
1/3 cup water
3 tablespoons lemon juice
1 tablespoon balsamic vinegar
2 teaspoons garlic, minced
1 teaspoon salt
1/8 teaspoon cayenne pepper
1/4 teaspoon black pepper
1 teaspoon cumin
1.Cook the millet in 3 cups of water until water is absorbed, about 30 minutes. Fluff with fork and allow to steam and cool.
2. In a large bowl, combine millet, black beans, tomatoes, pepper, cucumber and onion.
3. Mix all dressing ingredients until well blended and pour over the salad, tossing to blend.
4. Cover and refrigerate until the salad is well chilled.
5. Serve on butter lettuce leaves or stuff into pita bread or wrap in a tortilla. by Rita L

Hi Rita,
This looks like a great recipe.  I'll definitely have to try this one out, especially since I don't have that many recipes that call for millet just yet.  I noticed you got it from recipezaar, I love that site.  I have found many great recipes on there.  Have you ever tried  It's pretty good as well.  Thanks for the recipe!

We must have found the same recipe. I made this and my family loves it.  My only change was to use spring onions instead of spanish onions and to drop the allspice from the original recipe.  Definitely delicious and cooling on a hot summer day.

Good salad, I substituted fennel bulb for cucumber and it was excellent.
