Asian Tofu and Spinach Quick Meal

Asian Tofu and Spinach Quick Meal

Preparation time: 12 minutes Cooking time: 5 minutes Yield: 4 servings

Tools you will need: Chef Knife or cleaver, cutting board, cutting towel to place under the board, hand towel, 3 small bowls (1 for waste products, one to hold your sauce, one to hold your roasted nuts), measuring spoons and cups, Wok or large pan with a lid, long wooden or metal spoon, serving platter, small pan to roast your nuts, small spoon to place your nuts on the platter.

Ingredients

 Sauce
 2 tablespoons Balsamic Vinegar, 1 teaspoon sesame oil, 1/2 teaspoon salt, 1 teaspoon pepper.

Dish
 3 cloves garlic (sliced), 1 pound spinach (washed and drained well), 1/2 cup thinly sliced carrots, 4 ounces tofu (cut into 1/2 inch squares), 1/3 cup chicken broth.

Garnish
 1/4 cup roasted cashews.   
 
Procedure

1) Make the sauce by combining the sauce ingredients in a bowl and set aside.

2) Place a Wok over medium- high heat until it is hot. Add the cooking oil; swirl to coat the entire wok. Add the garlic and cook quickly for 10 seconds. Add the spinach, carrots, and tofu, stir for 1 minute. Add the chicken broth and the sauce stir to mix well and cover. Cook covered for 4 minutes. Discard the excess liquid and place on a serving platter.

3) Place a frying pan over your hot burner. Once hot, place the cashews in. Move pan while cooking as to not burn the nuts. Once the nuts are golden brown and toasted tilt the pan towards a bowl and remove and set aside. Once cool enough to hold remove with a small spoon and place around the rim of the platter and serve.
