Apple Cranberry Tart with Walnut Almond Crust

A nut crust is the perfect foundation for creating a stunning, yet simple, fruit tart. Marry apples and cranberries for a satisfying sweet-tart flavor during fall and winter, or transition to blueberries, strawberries or peaches in the summer months. This simple gluten- and dairy-free dessert is sure to inspire and delight.

Ingredients

Nut Crust:

1 cup walnuts
1 cup almonds
cup Medjool dates, pitted (approx. 6)
1 Tbs + tsp unrefined coconut oil
1 tsp vanilla extract
tsp sea salt
tsp cardamom
⅛ tsp freshly grated nutmeg

Fruit Filling:

3 cups apples, medium dice (Fuji, Honeycrisp or other sweet crisp variety)
1 cup pear, medium dice
1 cup fresh or frozen cranberries
cup + 2 Tbs water, divided
cup maple syrup
1 tsp cinnamon
tsp salt
1 Tbs arrowroot powder
 
Directions

Nut Crust:

1. Preheat oven to 350F.
2. Grease 9 tart pan with coconut oil.
3. In a food processor, pulse nuts until they resemble very coarse crumbs.
4. Add dates, coconut oil, vanilla, salt and spices and process until mixture is well combined and holds together when pressed.
5. Firmly press nut mixture into bottom and sides of tart pan.
6. Bake 12-15 minutes until golden brown. Cool for 10 minutes.

Fruit Filling:

1. In a medium saucepan, heat apples, pear and cranberries, cup water, maple syrup, cinnamon and sea salt over medium heat for 20 minutes, until apples are soft and cranberries burst.
2. In a small bowl, whisk arrowroot with remaining 2 Tbs water to form a slurry.
3. Once fruit has broken down, slowly pour in slurry, stirring over low heat until thickened. Set aside to cool for 10 minutes.
4. When filling has cooled slightly, pour into tart crust. Chill for hour prior to serving.

Yield: one 9 tart
