Wild Greens - Hot and Sour

Right now wild greens are abundant in fields and back yards. They are superpacked with nutrients, are delicious and free. Harvest responsibly. Cut a portion of the leaves and leave the rest of the plant. Delicious and common wild greens are dandelions, mustard greens and nettles (pick with gloves). All of these can also be bought at farmer's markets and other markets. The following recipe works well with any type of greens.

Hot and Sour Greens

1 lb mixed greens
2 tsp coconut oil
2 large cloves garlic minced
1/4 tsp red pepper flakes
1/4 tsp dry mustard powder
2 Tbsp rice vinegar
1 tsp tamari sauce
1 tsp raw honey

1. Wash and drain greens. Shred or slice into ribbons.
2. Heat the oil in a skillet over medium-low heat. Add the red pepper flakes and garlic and stir fry for 1 minute.
3. Add the greens along with the mustard powder and stir to coat the greens with the spices.
4. Mix the rice vinegar, tamari sauce and honey together and add to the greens.
5. Cook, covered over medium-low heat until greens are tender. About 5-10 minutes.
