Blueberry Turkey Meatballs

Blueberry Turkey Meatballs

These are delicious - when I first tried them, I was like blueberries, really? But they are just so delicious. While on the AutoImmune Protocol, these became a quick and easy breakfast, snack or dinner. They are great to keep either in the fridge or freezer.

Ingredients:
1 lb ground organic turkey, thigh meat
1/2 cup organic blueberries
1 teaspoon maple syrup
1 teaspoon sea salt

Instructions:
Preheat oven to 350 degrees F.

Mix all ingredients together. With a spoon or small cookie dough scooper, scoop out meatballs and place in a well greased glass baking dish. Bake for 30-40 minutes or until cooked through.

These guys smell so delicious! Enjoy!

I made these today and they were surprisingly good. I followed your recipe but added a sprinkle of Herbs De Provence.

Super fast and easy to make. Thanks for sharing!

Thanks for sharing this!  They sound great.  I have been following a modified AIP diet for the last year now, and it's always nice to have new ideas for easy recipes, especially breakfast.
