Bruschetta Mixed Greens and Tuna Salad

Bruschetta Mixed Greens with Tuna Salad Recipe

This recipe is a light summer lunch, a favorite go-to meal for my wife and I when the days are long and hot. Enjoy!

Here’s what you’d need:

Bruschetta Mixed Greens
3 cups organic mixed baby greens
1/3 cup diced organic tomato, fresh or canned
2 cloves organic garlic, minced
8-10 fresh organic basil leaves, thinly sliced* or chopped
1 tbsp olive oil
Salt/Pepper to taste

Tuna Salad
¼ cup canned tuna
1 hardboiled organic egg, diced or mashed
½ cup organic cucumber, diced
1 tbsp mayo
1 tsp mustard
1 tsp Dijon
Salt/Pepper to taste


Here’s what you do:

Add all prepared mixed salad ingredients to a large bowl and combine thoroughly. Mix all prepared tuna salad ingredients thoroughly. Plate mixed salad and top with tuna salad mixture. Enjoy with fresh, warm bread for a delicious dinner or dish out in a smaller serving for a light side salad. Recipe serves two.

Thanks, great summer recipe! If you want to skip the mayo, you could add a dash of olive oil or whole olives.
