Baked Avocado & Egg

Hey All-
Greetings from Houston, Texas!

Do you like avocado?
Do you like eggs?
Do you like breakfast?

Here is something really easy for you if you answered "yes" to any of my questions!


2 eggs
Spice (paprika and parsley work for me) of choice
possible salt and pepper (as desired)

preheat oven to 350
cut avocado in half, length wise, remove pit
scoop out some of the flesh, so that you have a deeper and wider hole than the pit left behind (don't toss that flesh, just eat it! )
place the avocado halves on a muffin tin- do not press them into the cups, simply rest them on top
crack an egg into each half (this is why you will want a deeper hole, else you will have egg all over the pan)
sprinkle with spice of choice
bake for about 30-35 minutes or until the egg is no longer runny
from there, you can eat right away or pack them for breakfast the next day!

I make these often, experimenting with different spices. Sometimes I whisk the egg and add some ham. Sometimes I top with cheese. They are versatile and a good quick hit when you need a jump start to your day!
