Sweet Potato Brownies

This is by far my favorite brownie recipe. I make them often.

I cup mashed sweet potato, 1/2 cup nut butter, 2 tbs maple syrup (I use honey), 1/4 cup cocoa powder, handful of carob chips, dash of mint alcohol free mint extract (optional)

Preheat oven to 350 degrees. Melt nut butter and syrup on the stove. In large bowl add mashed potatos, melted nut butter and syrup, cocoa, and extract. Mix well. Fold in carob chips. Pour mixture in greased pan and bake for 20 mns or until cooked. Let cool before slicing. Personally I love to let them cool overnight in the fridge, they get "gooey". Top with coconut whip cream and they are extra yummy!
