Looking for Fruit Shrub Recipe

I saw the current Nat'l Chef class Showcase video on Facebook and noticed you'd made a fruit shrub.
We didn't do that in my class and I'd love to see a recipe - I know they are typically made with sugar, can honey be safely used instead?
