PHO Inspired Veggie Bowl

PHO Inspired Veggie Bowl - For the Veggieholic inside all of us! Printable Recipe Attached

Fun and warming soup that allows for kitchen creativity and a nutritional punch of vegetables and spices.

Minimal prep time unless you are making your broth yourself (highly recommended). Makes a great breakfast, lunch or dinner meal. Supports  cleansing, detox as well balancing diets.

Ingredients
4 cups of homemade vegetable / chicken broth or substitute with water
4 heads of bok choy
- cup of thinly sliced radish (Spanish, red, daikon)
1 cup shredded purple cabbage
1 cup halved green beans or yellow wax beans
1 small bunch of pea shoots
cup of sliced or julienne carrots
3 cloves of minced garlic
2 teaspoon of ghee or coconut oil
1 tablespoon of freshly grated gingerroot
1 teaspoon sea salt
1 tablespoon chopped green onions
1 teaspoon chili oil (optional)
1 teaspoon lime or lemon juice


Directions
Place vegetable/chicken broth in a pot and bring to a low boil. While waiting for broth to heat, clean and prepare all other ingredients and split the items between two large soup bowls, except chili oil, citrus juice, sesame seeds and green onions. Once broth is boiling, remove from heat and carefully pour half slowly over each bowl with vegetables. Let vegetables sit in the hot broth for 5 minutes to soften and cook.  Add chili oil and citrus juice at this time.
 
Optional Ingredients: For added protein add 2-3 ounces of cooked shredded or thin cut chicken, beef or seafood.
