Best tablet/laptop for Nutritional Consultant

Hi
I'm am planning to enroll for the Summer distance learning for NC. As I am in need of a new computer anyway, I'm wondering if anyone has any recommendations for the most ideal tablet or laptop to enable great quality and ease for assignments, projects etc.
