Broccoli & "Bacon" Muffin-Tin Frittatas

Big hit with the kids this morning and a nice change from the usual breakfast/lunch fare for all of us:

2 c broccoli (recipes says florets but I used stems & leaves as well) cooked until tender-crisp.
3 bacon slices, cooked and crumbled. (I used Sweet Earth Benevolent Bacon -vegan)
8 large eggs
1/4 c 2% milk
1/2 tsp salt
1/2 tsp freshly ground black pepper
2 oz shredded cheese (your choice or optional)

1. Preheat oven to 350.

2. Coat 12 cup muffin pan. Divide broccoli & bacon evenly among muffin cups.

3. Crack eggs into large bowl. Add milk, salt, and pepper; stir with a whisk until well combined. Divide egg mixture evenly among muffin cups. (I used only 8 for slightly larger frittatas). Sprinkle cheese evenly on top. Bake @350 for 18 min or until just set. Cool for 2-3 minutes, then run butter knife or spatula around sides to loosen.
