Salad dressing recipe?

Hi everyone, I'm looking for a good salad dressing recipe, I typically just use lemon and olive oil and would love to try something different! Any suggestions or recipes would be appreciated! Thank you!

I make a really creamy and delicious Avocado Salad Dressing.

What you need:

1/8 cup red wine vinegar
1/8 cup apple cider vinegar
1/2 avocado
1/2-1 teaspoon maple syrup
1 teaspoon salt
1/2 teaspoon pepper
1/2 lemon or lime (juiced)
1/2 cup + 1 tablespoon olive oil

What you do:

Combine the first 7 ingredients in a blender and start blending, add in the olive oil slowly and blend well, add a splash or two of water if the dressing is too think. Keeps about 4-5 days in the fridge. You could use all of one vinegar if you want, but I have found the mix of red wine vinegar and apple cider vinegar really tasty!

This has been my favorite thing lately:

"Vegan Avocado Ranch Dressing
Makes around 8 oz

1 Large Avocado
1 cup Coconut Milk, canned & full fat
3 tbsp Lemon Juice
2 tsp Dill
1-2 tsp Salt
1 clove Garlic (or 1 tsp Granulated Garlic)
1/2 tsp Granulated Onion

Throw all ingredients into a blender or food processor and combine until thoroughly mixed.

Stores for up to a week when refrigerated in an airtight container the lemon juice prevents browning."

I love experimenting with my blender and making all different kinds of homemade salad dressings. Miso alway makes dressings a little creamy, sweet and salty. Using a blender will help emulsify the oil and make all the ingredients stay mixed.

Last night I made a classic version of Cesar Dressing for the first time, after many years of experimenting with vegan versions.

Here is my casual recipe for Cesar:
Add 2 egg yolks, 2 cloves garlic, 1 tsp lemon juice, 1-2 tsp mustard, 1 tsp fish sauce, 1/2 tsp honey, 3 anchovy fillets, salt and pepper to a blender and blend until well combined. Stream in olive oil (1/4 to 1/2 cup) until it is well combined. You have to be careful to not over blend, which will cause the emulsification to "break" and the oil to separate. With this recipe it is best to taste and adjust the salt, acid, and mustard levels to your personal preference.

This is my go to salad dressing. I am a little obsessed. Enjoy!

INGREDIENTS:
1 tablespoon of organic dijon mustard
1/4 cup of Apple Cider Vinegar
1/2 fresh lemon juice (squeezed)
1/3 cup extra virgin olive oil
Pepper to taste
OPTIONAL: 1 tablespoon of honey

DIRECTIONS:
Combine all ingredients into a mason jar. Shake. If you use honey continue shaking until the honey has dissolved. This salad dressing stays fresh in the fridge for a week.
