Curtido (a type of saurerkraut)

Cabbage is in season where I am (Minnesota) so I thought I would share this recipe for a flavorful sauerkraut. If you make fermented vegetables, this is a great recipe. I actually use it on my salads instead of salad dressing. Let me know what you think!
