Spicy Sriracha noodle soup

Hi everyone! This is one of my favorite recipes to start making this time of year, now that itís finally starting to cool down. Itís super easy to make, and you can even make the broth beforehand and it will save in the refrigerator for at least 3 days. This is something the whole family will love if you like a little spice!

Here are the ingredients
-2 tablespoons sesame oil
-2 tablespoons Sriracha hot sauce
-1 small white onion, diced
-1 small roma tomato, diced
-1 tablespoon ginger, grated
-1/2 cup green onion, chopped
-1/2 cilantro, chopped
-5 cloves garlic, minced
-3 packages soba noodles
-1/2 teaspoon garlic powder
-1/2 teaspoon celery salt
-2 cups water
-4 cups vegetable broth
-1 tablespoon Braggs liquid aminos
-1 teaspoon rice vinegar

Step 1.
Add the Sriracha and sesame oil to a large pot, and bring to a simmer over medium heat. Add the tomato and onion for 4 minutes, stirring occasionally. Add the garlic, ginger and seasonings, and cook for 2 minutes. Add 2 cups water then transfer into a blender and blend until smooth. Return mixture to pot then add the vegetable broth.

Step 2.
Bring to a simmer, add rice vinegar and liquid aminos, and simmer for 8-10 minutes.

Step 3.
Lastly add the soba noodles and let them cook for 2-3 minutes. Laddle soup into bowls then top with green onion, and cilantro and squeeze some fresh lime on top if you choose!
