Turkey and quinoa stuffed peppers

This is a simple dinner recipe packed with nourishing ingredients, including turkey, quinoa, and spinach.  I made this recipe last week and it was a very satisfying and filling meal. It would be good on its own or could be served with a side salad. Leftovers were also delicious.

4 bell peppers (I used red peppers)
I cup quinoa
2 cups water or broth
1 lb organic ground turkey
2 Tbsp olive oil
1 medium onion (chopped)
2 cups spinach
2 cloves garlic (minced)
2 cups of clean marinara sauce
1/2 tsp red pepper flakes
salt and pepper

1) preheat the over to 400 degrees
2)Remove the stems and seeds from the bell peppers and cut in half lengthwise. Place them face up in a pyrex baking dish sprayed with oil (so they don't stick)
3) In a pot bring 1 cup quinoa and 2 cups water or broth and boil, then turn down and simmer for 15 minutes until cooked.
4)In another large pan heat the 2 Tbsp olive oil over medium heat. When heated add the 1 lb of ground turkey and 1/3 and onion to the pan. Cook until meat is cooked through (about 10 minutes)
5)Add the spinach and garlic to the pan and continue to cook for another minute
6)Remove from heat and stir in the 2 cups of marinara and 1/2 tsp red pepper flakes.
7) When the quinoa is done add it to the turkey mixture and season with salt and pepper
8) Scoop the turkey and quinoa stuffing into the halved bell peppers
9) Bake at 400 degrees for 30 minutes and enjoy!

Also this recipe is filled with protein and would make a great addition to a building diet or meal before a workout. The turkey and quinoa make it a very filling meal. What are your go to foods/ meals for  a filling meal or pre workout?
