Zucchini Hummus

This is a recipe from my friend Darshana of Fruition Women's Health (www.fruitionhealth.com) in San Francisco.  It takes only two minutes to make and works as a dip, spread, or topping for a salad.

Zucchini Hummus


1 Zucchini (peeled + chopped in chunks)
2 Tablespoons Raw Tahini
2 Tablespoons Lemon Juice
1 clove Garlic
1/4 Teaspoon Paprika
1/4 Teaspoon Cumin
1/4 Teaspoon Salt
A touch of cayenne- (optional)

Blend all ingredients together until smooth in a food processor, blender or vitamix. 
You may need some water or oil (flex or olive work well) to get the blending going.
