this is a tasty recipe, suitable for most diets

play with it a bit and make it your own...

 5 ripe bananas, mashed
1/2 cup coconut oil
1/4 cup unsweetened jam
1/8 cup maple syrup
1.2 tbsp vanilla extract
1/4 cup almond milk
2 eggs, beaten

1 tsp salt
1 tbsp baking powder
3 1/4 cups flour***

1/2 cup chocolate chips (or berries)
1/4 cup dried coconut flakes

**use a mixture of flours, such as amaranth, quinoa, brown rice, barley, tapioca, etc.
 OR use a gluten-free flour mix (buy at berkeley bowl or whole foods)

preheat oven to 350.  mash bananas and mix with other wet ingredients. wisk flours, salt, baking powder together.  slowly add wet ingredients, mixing well.  add chocolate chips (or berries) and coconut.  spoon into greased muffin cups, sprinkle with extra coconut and garnish with a few chocolate chips.  bake at 350 for 18-22 minutes

Can you clarify the amounts of the ingredients at the top of the recipe.  Is it cup, tablespoon, or what?  Thanks!

I contacted Kasey and she gave me the measurements.  I have edited her original recipe above; it should read perfect now.  Thanks for catching that!
