Shiitake Miso Soup

     The change of seasons is upon us, and with it, the beginning of cold and flu season.  This soup is a delicious immune booster, and simple to make.  It is a good addition to your cold weather recipes.

                           Shiitake Miso Soup

                    1 cup sliced shiitake mushrooms
                    1 cup thinly sliced carrots
                    2 Tbsp. thinly sliced ginger
                    2 Tbsp. extra virgin olive oil
                    3 cloves minced garlic
                    5 cups water or vegetable stock
                    2-3 Tbsp. light miso (to taste)
                    1/3 cup cubed tofu, optional
                    2 sliced scallions

     Saute shiitakes, carrots, and ginger over medium heat in olive oil for 3 minutes.
 Add garlic and cook for 1 minute.

     Add broth or water (and tofu if desired) and simmer, covered, for another 5
 minutes, or until carrots are tender.  Turn off heat.
     
     Dissolve miso in small amount of the hot broth and return to the soup.  Add
 scallions and cover, Let stand for 2 minutes and serve.
