Taffy Apple Salad

The Seasonal Healthy Version!
2 green apples
1 red apple
1 lemon
1 carrot
1/2 small red cabbage
1/3 cup dried coconut
1/2 cup soaked and roasted walnuts
1 cup yogurt
1tsp vanilla extract
8 drops liquid vanilla stevia
8 drops liquid English toffee stevia

Soak walnuts in filtered water with teaspoon sea salt for 8hrs.  Drain walnuts and spread the nuts out on a cookie sheet.  Dry the nuts on 150 degrees until dry and crispy (about 12 hrs).

Cube the green and red apples.  Juice the lemon and soak apples in lemon juice to keep them crisp.  Using a food processor with the shredding disk, shred the carrot and the red cabbage.  Mix together apples, shredded carrots, and shredded cabbage.  Add the roasted walnuts and the dried coconut.

In a separate bowl, mix the yogurt, vanilla extract, liquid vanilla stevia, and the liquid English toffee stevia together.  Pour this over the salad and mix.
