Vitamin B Rich Recipe

Love this one, my sister came up with it for Thansgiving, and I realized after my Vitamin B2 report, that it's an excellent source of B Vitamins. 



½  C wild rice, rinsed

½   C brown rice, rinsed

2 T olive oil

2 medium onions, diced

3 garlic cloves, minced

½ pound mushrooms, sliced

2 ¼ c chicken or vegetable broth

1¼ C peeled pumpkin or
       winter squash, in 1” cubes

½ tsp. savory or thyme

½ tsp fresh rosemary

1 T soy sauce

½ cup slivered or sliced almonds    DIRECTIONS:

   In a large heavy skillet heat the olive oil with a few tablespoons of broth, and add the diced onions, garlic and mushrooms.  Sauté until the vegetables are just softened.
   Add the wild & brown rice to the pan along with the remaining broth, pumpkin or squash, spices and soy sauce.  Bring mixture to a boil, reduce heat and cover.  Simmer for 40-60 minutes or until the liquid has been absorbed and the rice is tender. 
   Toss the rice with the almonds and serve hot or warm.
   Enjoy!
