Bulgur and Poppy Seed Pilaf

2 tbls fresh ginger, finely chopped
2 tbls fresh garlic, finely chopped
1/2 tsp olive oil
2 cups water
1 cup bulgur, rinced
1/4 cup poppy seeds, lightly toasted
1/4 cup dried apricots, chopped
1/4 cup goat cheese, crumbled
salt and pepper
Sautée ginger and garlic in oil in a small heavy saucepan over medium heat, until golden.
Add bulgur, water and a 1/2 teaspoon salt. Simmer, covered, until liquid is absorbed, about 15 minutes. Remove from heat and let stand, covered, 5 minutes. Add poppy seeds, apricots and goat cheese. Season with salt and pepper.
Fluff with a fork before serving.
