Curried Cauliflower Recipe

1 Head Cauliflower
1 Can Beans (drained)
1 Medium Yellow Onion (chopped)
1 Tbsp. Coconut Oil
1 Bunch Coriander (chopped)
1 Tsp. Turmeric
1 Tsp. Cumin
˝ Tsp. Cinnamon
Dash of White Vinegar
Vegetable Broth (for gravy)
Salt to taste

1.  Bring pot of water to boil and add cauliflower for about 5-7 minutes until a little soft.

2.  In a large pot, heat coconut oil, add onions and sauté until translucent.  Add chopped coriander and continue to sauté.

3.  Add all spices to pot and mix until onions and coriander are evenly coated, then add a dash of vinegar and vegetable broth to created desired amount of gravy.

4.  Add cauliflower and beans to pot and mix well to evenly coat it with spices.  Bring to a boil for a few minutes.  Adjust amounts of spices and liquids to taste.

5.  Serve hot or room temperature, alone or with brown rice or whole wheat naan.
