Lemon-Dijon-Dill Dressing: perfect for spring salads!

Hi friends,
this recipe is originally taken from the Beyond the Moon cookbook (Ginny Callan). It is simple, springy, and delicious! You may want to adjust the dijon depending on the spiciness of the type you have...

Lemon-Dijon-Dill Dressing

1/2 C fresh dill, chopped
1/2 C fresh parsley, chopped
2 cloves garlic, peeled
1/4 C fresh lemon juice (or more if desired)
2 Tbs dijon mustard
3/4 C olive oil

Combine all ingredients, except oil,  in a blender until smooth. Turn blender off and add in 1/4 C of oil. Turn blender on and slowly add the rest of the oil.
