Gluten-Free Meatloaf

This started as an experiment to see if it was possible to make a traditional meatloaf sans breadcrumbs. By adding egg and cheese to keep it all together, the meatloaf was a success!
Homemade Meatloaf
2 Pounds lean
grass-fed
Ground Beef
1 Lg. Carrot, minced
1 Lg. Onion, minced
3 Celery stalks, thinly sliced
1 cup grated Parmesan cheese*
2 Eggs
2 Garlic cloves, minced
Fresh Parsley or season as desired
Salt & Pepper
Marinara sauce (optional)
*To make this dish dairy-free leave out the cheese and add more egg, but I can't guarantee that it will stay together as nicely (or taste as good).
Preheat the oven to 350 degrees. With your hands, mix up all the ingredients in a large bowl. Next, dump your colorful hunk of meat into a casserole dish and pop it in the oven for about an hour. Once it's cooled off you're safe to enjoy! You can add Marinara sauce to top it off if you'd like.

I make meatloaf often and I never add cheese or breadcrumbs. Fat will bind it together just fine. If you are using ground turkey you will need to add fat. I typically add olive oil and cook on a lower temp.
