Here's an incarnation of an on-going chai recipe:
for two:
one cup H2O, put in pot and bring to boil
meanwhile, back at the ranch, grind cardamom pods with a mortar and pestle and add them. how many? two to four pods. (it's the seeds you want to crush and use, not the pod itself. but nature being what it is, you have to get through the pod to get to the the seeds; how inconvenient)
add the crushed seeds to the water.
toss in a stick of really high quality cinnamon
chop and peel a thumb sized piece of fresh ginger root, (a little thumb) and toss it in
a few cloves
one big Tablespoon of rooibos tea (pronounced Roy-boss by the way)
bring to boil and simmer for 8 minutes once you add the rooibos.
then add one cup whole milk, soy milk, etc and bring it to a boil so that it rises up three times and then strain it into a cup where you've already placed a little Really Raw honey, some saffron threads and a little vanilla extract.
If you want the go for the gusto recipe then add a vanilla bean and licorice root to the mix and let that simmer and boil.
it's good.
and by the way, so good for you. the rooibos is full of antioxidants and great for the immune system and the spices are all very healing in general and pacifying for vata, from an ayurvedic perspective.
