Vegetarian needs gravy recipe -- HATES MUSHROOMS

Any ideas appreciated for a vegetarian gravy for those yummy mashed potatoes. Just no mushrooms, please!!

Vegetarian Gravy

1 tbsp. sunflower oil
2 cloves garlic, minced
1/4 c. tamari
1/4 c. flour
1/2 c. nutritional yeast (not yeast for baking)
1/4 c. tahini (sesame butter) or almond butter
1 tbsp. marjoram
Salt and pepper to taste

Heat the oil in a saucepan and saute the garlic for 2 minutes. Stir in the tamari, flour, yeast, tahini, and marjoram; whisk to form a smooth paste. Simmer for 5 minutes, stirring often.

2 to 3 c. water
1/3 c. fresh parsley, minced

Whisk in water to thin the gravy, which will thicken as it continues to cook. Simmer for 10 minutes over medium heat; avoid scorching. Stir in the parsley; taste; adjust the seasoning. Serve piping hot. Serves 4.

Thanks, but my crowd is not wild about the nutritional yeast. Any others out there?

These 2 are easy and please even picky eaters!  ;D

VEGETARIAN BASIL OR SAGE GRAVY   

1/8 c. olive oil
1/2 c. whole wheat flour
2 tbsp. sesame seeds
1 1/2 c. water, soy milk or skim milk
Tamari (a soy bean liquid which adds flavor and salty taste)
Black pepper
Garlic powder

Put 1/8 cup olive oil in a pan and heat over medium heat. Gradually add 1/2 cup whole wheat flour, stirring so that the flour is fully soaked by the oil. You can partially substitute oat bran for the flour. Add 2 rounded tablespoons of sesame seeds and continue to cook for 1 minute or so. Then add 1 1/2 cups water, soy milk or skim milk, stirring continuously until there is a proper gravy consistency.

Add 1 tablespoon of tamari, black pepper and garlic powder to taste. Finally, add either chopped fresh basil (or dried basil) or chopped fresh sage (or dried sage) to taste. Cook for about 1 minute or so after adding basil or sage. Serve over fresh biscuits with sliced tomatoes and preserved on the side. Serves 2.

BROWN GRAVY   


2 c. milk (skim, soy, nut)
1/4 c. whole wheat flour
1/2 tsp. salt
Vegetarian sausage patty (optional)

Brown flour in non-stick pan. Add salt and milk. Heat and stir until smooth. Add chopped patty pieces. Simmer until thickened. Makes thin gravy. For thicker gravy add less milk or more flour.

Servings: 2 cups.
