Cauliflower and Kale with Mustard Currant Dressing

I made this for my NE 104 snack demo and everyone seemed to like it. Great if you (or those you cook for) aren't fond of "straight" kale. Makes 4 large servings.

2 T olive oil, extra virgin
1 bunch dino or curly kale, organic chopped
1 head cauliflower, organic chopped
1 quart water
3 T currants, dried
2 tsp organic lemon zest
Lemon juice from organic lemon
1 T Dijon style mustard, organic
Salt and pepper to taste

1) In a medium bowl, whisk together mustard, lemon zest, and lemon juice. Slowly drizzle in olive oil, whisking constantly. Mix in currents. Set aside.
2) Boil water in a medium saucepan with a steamer rack. Steam cauliflower 4 minutes, until just tender. Drain cauliflower and transfer to bowl with the dressing. Remove steamer rack from pan and place kale in the boiling water. Cook 2 to 3 minutes, until just tender. Drain and transfer to bowl.
3) Toss cauliflower and kale with the dressing to coat. Season with salt and pepper.
