Violet Velvet Cake

Violet Velvet Cake

2 1/2 cups grated raw beets
1/2 cup agave nectar
1/2 cup honey
4 eggs or equivalent in egg replacement product
1/2 cup coconut oil
1 tablespoon vanilla extract
1/2 teaspoon almond extract
1/2 cup carob powder
1/2 teaspoon celtic sea salt

In a medium saucepan, heat the beets honey and agave to a boil
Reduce to a simmer and cook for 30 minutes, until beets are soft
Transfer beet-honey-agave mixture to a blender and puree on highest speed until smooth
Blend in oil, vanilla, almond extract, carob and salt until thoroughly incorporated
Pour batter into a well greased 9-inch cake pan
Bake at 350 for 20-25 minutes until a knife inserted into the center comes out clean
Cool and serve

Just made this cake... it is delightful!  Thanks for this tasty recipe- I had no idea beets were so versatile!
