Jamaican Jerk Tempeh

adding a little island flava to plain old tempeh..

3 cloves garlic, minced
1/4 cup grated fresh ginger
1/4 cup sliced scallions
1 jalapeno, seeded and diced
2 tsp salt
1 tbsp allspice
1 tbsp thyme
1/4 tsp black pepper
1 tsp cinnamon
1/2 tsp nutmeg
2 tbsp olive oil
1 tbsp lemon juice
3/4 cup apricot juice (or apple, pineapple..)
2 tbsp maple syrup
2 8 oz packages tempeh, cut into thin long strips
1 red onion, thinly sliced into half moons

preheat oven to 350
whisk together everything except tempeh and red onions
pour a small amount of marinade into shallow baking dish
add tempeh, cover with red onions, and pour remaining marinade over everything
cover and bake for 40 mins
let stand a few minutes before serving

serves 6ish
