Jicama-Orange Salad
« on: April 08, 2009, 08:19:46 AM »
Hello Everyone,

This recipe comes from the book, The Jungle Effect, by Daphne Miller, MD.  She talks in this book about the advantages of eating as ones ancestors did and avoiding the new western diet.  This recipe comes from Copper Canyon, Mexico, a cold spot for Diabetes.

3 cups orange or grapefruit sections, peeled (about 4 oranges or 2 grapefruits).
1 jicama, peeled (1 1/2 lbs)
1/4 cup fresh orange or lime juice
1/4 tsp salt
2 Tbs olive oil
1 dash chili powder
1/4 cup chopped fresh cilantro
1/4 cup toasted pumpkin seeds

Prep: Cut the citrus into bite-sized chunks. Peel the jicama and slice into strips that are about the size of a french fry- 2 inch long and 1/2 inch wide.  Combine the orange juice, salt, oil, and chili powder in a bowl, and then add the jicama strips and chopped citrus; toss gently. Cover; chill 30 minutes. Sprinkle with cilantro and pumpkin seeds.

Jicama is a great source of vitamin c!
