Thai Peanut Chicken Curry

I recently just made a yummy curry from scratch and my family loved it so I though I would share it with you all

1 can coconut milk
1 cup natural organic crunchy peanut butter
1/2 cup braggs aminos
1 medium onion
1 red bell pepper
5-6 cloves minced garlic
1T minced ginger
2 cups mung bean sprouts
1 T curry paste (I used Patak's)
1 large bunch of cilantro
1/2 T cayenne
1/2 T red pepper flakes
2 whole chickens

I pre-cooked the chickens in a crock all day and then removed the skin and bones then added the sauce but you can probably cook it all in a crock all day long if you don't want to do it that way.
Otherwise, cook the sauce seperately on the stove.  Just combine all ingredients and heat on medium and stir occasionally so that the peanut butter doesn't burn on the bottom.

oooohhh..I have to try this! I love Thai food!! I want to take a Thai cooking class.
