If you go to You Tube and punch in: Seven Minutes to Raw you will see me make an excellent kale salad.
Blessings,
Brigitte

I just watched Brigitte's video on some raw foods and I really enjoyed it. I made a raw kale salad for NE class last year, and it was similar to Brigitte's but I added more. Here it is:
Seedy Kale Salad: Serves 4-6
Ingredients:
1/3 cup lemon juice
1/3 cup olive oil
1/2 medium red onion, sliced into thin half-moons
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
1/4 cup sesame seeds
1 pound fresh kale
1/2 cup sunflower seeds
1/2 cup alfalfa sprouts
1 avocado, cut to 1/2 inch cubes
1 cup shitake or cremini mushrooms, thinly sliced
Procedure:
Combine lemon juice and oil. Add the onion slices and set aside to marinade while making the salad.
Toast all the seeds.
Destem kale. Stack or roll the kale and chiffonade into 1/4 inch or less strips. Toss or compost the stems.
Mix the dressing and the kale and Massage the dressing into the kale with your hands. Be thorough and don't worry about rubbing too hard, the kale can take it.
Add the rest of the goodies when the kale is ready.
Mix everything together and enjoy!
