Banana Oatmeal Pancakes (satisfying breakfast!)

This is a great start to your morning.  I eat them about 3-4 times/week for breakfast.  They seem to satisfy me for hours.

Ingredients for 1 serving (makes 2 pancakes or one very large pancake)

- 1/2 c. oats (I grind them in a blender to give it a "flour" consistency)
- 2 egg whites
- 2 TBSP organic applesauce (-more if you prefer softer, fluffier pancakes or -less if you prefer more dense pancakes)
- 1/2 mashed banana
- 2 TBSP ground flax seeds

Directions: Mix ground oats, egg whites, applesauce, and flax seeds (I simply use a fork to mix).  Then add mashed banana (or add banana and mash into mix).  Pan fry over low-medium heat with a dab of organic butter (or your choice of fat).  Flip pancake to ensure thorough cooking.  Eat alone or serve with additional toppings (sliced almonds, pure maple syrup, etc.).

optional additional and/or alternative ingredients:
- occasionally I'll add blueberries, a tsp. of pure vanilla, cinnamon, sliced almonds, or almond butter


**I often grind a few cups of oats at a time to have on hand, as it saves time for future preparation

Thanks for the pancakes, they are so so good!  I tried, crushed pineapple in place of applesauce and a few raw walnuts.  Shirley
