Raw Mediterranean Dolmas

This recipe is from Ani Phyo's Raw Food Kitchen cookbook.  It's the simplest raw recipe ever and really tasty.  The sun-dried tomatoes combined with the raisins have both a great savory and sweet flavor.  Even my non-veggie friends love this.

1/4 cup sun-dried tomatoes
2 tablespoons dill, chopped
2 tablespoons raisins
1/4 cup pine nuts
1 tablespoon olive oil
pinch sea salt
1 collard leaf, destemed

Cut out the center stem from the collard leaf.  Then cut the collard leaf into 4 equal pieces.  Put aside.

Mix all the other ingredients together in a bowl.  Spoon equal portions into each collard piece and roll up to eat.  Enjoy!
