Tandoori Paneer on Skewers

I want to share with you an Indian-inspired recipe using Paneer (Indian farmer's cheese) that I've grown to like:

Ingredients (Serves 4)
1-1/2 cup plain yogurt (goat or cow yogurt)
1 tsp   ground turmeric
1 tsp   ground cumin
1/2 inch   piece ginger, peeled and finely grated
2   garlic cloves, crushed and finely chopped
1-1/2 Tsp lime juice
sea salt to taste
2 Tsp   chopped mint leaves
1 Tsp   chopped cilantro leaves
8 oz   paneer, cut into 3/4 inch cubes
1   large green bell pepper, seeded, cut into squares
1   firm ripe mango flesh, cut into 3/4 inch cubes
3   firm tomatoes, cut into cubes
1   onion, cut into chunks
2 Tsp   melted ghee

1. In a bowl, combine together the yogurt, turmeric, cumin, ginger, garlic, lime juice and sea salt. Stir in the mint and the cilantro. Add the paneer, bell peppers, mangoes, tomatoes and onions, and stir until well coated. Refrigerate covered for 3-4 hours. 
2. Using 8 skewers, thread the marinated paneer, fruit and vegetables, and brush with the ghee.
3. Heat the grill over high heat, and grill on all sides for 2-3 minutes each side, or until cooked and slightly charred around the edges. Serve warm.
