Heirloom Tomato Salad

This is a yummy summer salad with a lot of versatility depending on your taste.  It is a basic recipe served as below or with added veggies and salty meat.  Good served cold or room temperature. 

Fresh Tarragon, Basil and watercress to taste, chopped
Variety color of Heirloom tomatoes - will give it sweet and tart flavor sliced into bite size portions
Red Onion - chopped into fine chunks
Olive Oil
Salt and Pepper
2 cloves Garlic, chopped
Avocado, sliced into bite size chunks
1/2 lemon

In a big bowl, add together Tarragon, Basil, Watercress, Tomato's, Red Onion.  Put bite size avocado chunks in a separate bowl and squeeze 1/2 lemon over to keep from turning.  After coating avocado with lemon juice, add it to the other ingredients and stir.  Finely chop 2 cloves of garlic.  Add a pinch or 2 of salt and continue to chop garlic incorporating the salt to make a sort of paste.  Add to the other ingredients and Pepper to taste.   Drizzle Olive oil into salad and then toss.  You just want to coat the ingredients with the oil, careful not to drown them.  Serve cold or room temperature.

Optional additional ingredients:
Bacon (nitrate free) baked in the oven to crisp, chopped and added to salad
Fresh cooked shrimp or salmon
Fresh baby spinach chopped
Sliced cucumber
Sliced Kalamata Olives
Balsamic vinegar - I've used Pomegranate balsamic and it gives it great flavor.
Raw baby carrots, chopped
Options are endless as your imagination - have fun with the salad.  You'll love it!
