Mock Chicken Salad

here is a super simple recipe that utilizes ingredients readily on hand in most pantries etc, and can address a comfort food craving...it's excellent and versatile.

Mock Chicken Salad

1 can chickpeas
Diced Celery to taste
Diced Onion to taste
Veganaise/Homemade mayo or the like to taste
Herbs/Spices to taste

Mash chickpeas with fork, mix in veggies, and you have a great, quick meal that can be served in a lettuce wrap, pita chips, or on a sandwich. You can also modify this recipe by adding curry, apples &/or raisins, or to resemble any other version of chicken salad you may have encountered.

Thanks...I usually make Mock Egg Sald using mashed tofu!!!  Great to know about the chickpeaks!!!
