I Can't believe its not Pesto!

Hello Health Nuts!

Here is my first post for a recipe, enjoy

SUPER PESTO

3 leaves lightly steamed Collard greens (to neutralize Oxalic acid and bring out the color)

1/2 bunch washed parsley

1 cup ground dried coconut (freeze then grind in spice grinder)

1/2 sheet nori (grind with coconut, snack on the rest)

2-3 cloves garlic (depends on how brave you are)

About 1 Tbls Celtic sea salt

About 1 tsp black pepper

1 Tbls nutritional yeast

2 Tbls live Lactic culture (optional or ad 1 Tbls lemon juice)

1/4 cup raw apple cider vinegar

About 1/2 cup High quality olive oil

Add all ingredients, except olive oil, to food processor and blend. Let blend  till coarse then slowly add olive oil till it turns to a creamy paste, add more olive oil if need. Will be quite pungent, best flavor if left over night in fridge.

This is awesome on toast, eggs, pasta, veggies, or by the spoonful!

Careful you might just thinks its the real thing!

Thanks for the post!  While I haven't tried your recipe, I have experience making pesto from all sorts of greens.  It is amazing how good they taste!   I like how you use coconut instead of nuts.  I will have to try that next time.

I guess I scared everyone away with this crazy recipe. Is there no one brave enough to try it?  I guess thats why they call me Health Nutz!
