Spicy Sweet Potato Quinoa Salad

2 1/2 cups cooked quinoa (1 cup dry)
1 large or 2 medium (about 1 pound) sweet potatoes
1/4 cup minced red onion
1/4 cup minced cilantro
1/4 cup toasted pepitas (pumpkin seeds)
2 tablespoons extra virgin olive oil
1 tablespoon freshly squeezed lime juice
1/4 teaspoon cayenne
1/4 teaspoon cumin
Freshly ground black pepper

1.   Cook the quinoa following instructions on the package.
2.   Meanwhile, peel the sweet potato and dice it into 1/2-inch or smaller pieces. Cook it in boiling salted water to cover until tender, about 15 minutes; drain well.
3.   Toss together the sweet potato, quinoa, red onion, pumpkin seeds and cilantro.
4.    Whisk the oil, lime juice, cayenne and cumin together and toss the salad with about half of this mixture; add all or some of the rest to taste.
5.   Add salt and pepper to taste

I love this recipe, i did add black beans to the mix and it was a delicious addition. Black beans and sweet potatoes go wonderful together.
