Mango Hijiki Salad
2 Mangoes
4 Tablespoons Dried Hijiki Seaweed
½ pound Frozen Shelled Edamame Beans
⅛ cup Red Miso
3 Tablespoons Tamari
1 Tablespoon Sesame Oil
2 Tablespoons Rice Vinegar
1 Tablespoon Sesame Seeds
Rehydrate hijiki in hot water for about twenty minutes.

Peel mango and julian into matchstick size spears.

Thaw edamame for five minutes in a pot of boiling water. Let cool.

Toss hijiki, mango and edamame together.

Whisk miso, tamari, sesame oil, rice vinegar and sesame seeds together. Pour onto salad and gently coat. Serve over fresh mixed greens.

This is my first post and hopefully not my last. 8)
If nuts are ok, how about almonds or macadamia nuts.

  • My new do!
I would suggest some raw almonds- maybe slivered or soaked or even sprouted!  Also sprouts would be a nice crunchy top to this.  Cucumber also sounds wonderful...what great recipes!
